Elderberries are usually the last berries to ripen in the summer (sometimes alongside some late to the party blackberries). The bushes grow wild across much of southwestern Ohio, but the ones I used for this syrup are from a cultivated patch. Elderberry syrup is easy to make. You'll combine equal parts elderberries and water in a pot along with sugar in the type and amount of your choice. I usually use honey, adding it as the mixture simmers until I'm happy with the taste. Cabbage white caterpillars can do a lot of damage in very little time.
